An insight into cookbooks from the sixteenth century to today
Are artichokes a recent addition to the vegetable shelf? Did people cook with yogurt in the Golden Age? Why did chicken from very expensive suddenly become cheap? Using the rich collection of cooking and recipe books from the Amsterdam University Library, Onno Kleyn and his daughter Charlotte provide an entertaining and sensory experience about what we put on the table yesterday and today.
Themes have been chosen. This offers – as the authors themselves say – a pleasure boat, a boat trip along the tasty idiosyncrasies of the cookery. Recipes are also included to illustrate the chosen themes. We start the tour with Eggs of Magirus from the 16th century and end the tour with ginger cake from 1968. The recipes are recorded in the original spelling and layout.
